Today I am going to share one of my favourite pies, the ultimate Blueberry & Vanilla cream pie. Delicious with ingredients from nature, perfect for the time of year when we practically can swim in blueberries here in Scandinavia.

There are many different recipes for making pie dough. After trying different ones and refining my own recipes, I find this to be the very best for this particular pie.

Pie bottom:

150 g butter

4 dl flour

0,5 dl powder sugar

1 egg

Mix together butter, flour and powder sugar. Add eggs and mix to a dough. Let the dough rest in the fridge for at least 30 minutes. Roll out the dough ca. 1 cm thick and place it on a oven plate. Bake in the oven at 175 degrees celsius for 20-25 min.

The recipe for the vanilla cream, or Crème pâtissière, I got from one of my favourite bakers/cooks in Scandinavia; Sébastien Boudet. He gives traditional agriculture and quality products a much needed voice. I can also proudly say that I personally met him at his very first bakery in Stockholm. Here is his recipe 

The finishing touch:

When everything is cooled down, grab a spoon and distribute the vanilla cream on the pie evenly. Take as much or little as you want. No restrictions here. Do the same with the blueberries and…voilà, your Blueberry & Vanilla cream pie is done.
